Sweet Pongal is the signature dish of the Pongal Festival or Makar Sankaranti.
Cook Time: 45Mins
Ingredients:
Raw Rice 1Cup
Moong Dhal 1/4Cup
Jaggery 1 1/2 Cup
Ghee 3tbsp
Cardamon Powder 1tsp
Raisins 10Nos
Cashewnuts 10Nos
Honey 2tsp(Optional)
Milk 1/2 Cup
Preparation Method:
1. Heat a Pan and roast Moong Dhal for 1min.Make sure not to burn the dhal.
2. Soak the Rice and Moong Dhal together in Water for 30Mins.
3. Pressure cook Rice and Moong Dhal together with 3cups of water for 4Whistles.
4. Now to make the Jaggery syrup, add 1cup of water to 1 1/2cups of Jaggery in a vessel and boil till the Jaggery melts.No need to check for the string formation of Jaggery.
5. In another pan, add ghee and fry Raisins and Cashewnuts.
6. Add Jaggery syrup, fried nuts,Honey,Cardamon Powder and milk to the rice in the cooker on the stove. Mix well by adding Ghee.Turn off the stove.
Some Tips:
1. Do not burn Cashewnuts and Raisins. Raisins are ready when they bulge after it is put into Ghee.
2. Adding Milk is optional.
3. Jaggery can be added a little more according to individual's taste.
